Grilled Guacamole

The Mills family loves to eat, sing and travel. 

When taking a break from football, Karmen Mills, wife of New Mexico Highlands head coach Jeff Mills, said her family likes to visit new places, attend concerts and try local foods. Their love for food is also rooted in each community that they become a part of. “We’re foodies,” said Karmen. “We totally engrain ourselves in the community and we love to try out all the different restaurants and food.”

While Karmen says her husband makes great burritos and the best hot wings she has ever eaten, her favorite recipe is grilled guacamole. This recipe adds a unique twist to a classic appetizer, and is perfect for any gathering!

Grilled Guacamole


  • 2 avocados, halved and pitted
  • 1 small tomato
  • 1 jalapeno
  • ½ small onion
  • 2 cloves garlic, unpeeled
  • 3 tablespoons fresh cilantro
  • 1 lime
  • ½ teaspoon kosher salt
  • 2 to 3 dashes Worcestershire sauce


Coat the avocado, tomato, onion, garlic and jalapeno. Grill flesh side down for 6 to 12 minutes, turning often. Scoop out avocado pulp into a bowl. Dice the onion and tomato and add the avocado. Mince the garlic and jalapeno and add the mixture. Add the remaining ingredients and mix together. Adjust the seasoning as needed
